Ingredients


  • ½ cup white sugar

  • 1 cup light brown sugar

  • 1 cup salted butter, browned and melted

  • 1 cup biscoff cookie butter

  • 2 large eggs

  • 1 tbsp vanilla bean paste or vanilla extract

  • 3½ cups all-purpose flour

  • 2 teaspoons cornstarch

  • ½ tsp baking powder

  • 1 tsp baking soda

  • ½ tsp kosher salt

  • 8 oz of white chocolate, chopped

  • ½ package or about 1 cup crushed or crumbled biscoff cookies


Directions


  1. Brown the salted butter on the stovetop and allow it to cool slightly.

  2. In a large bowl, combine white sugar, light brown sugar, and the melted butter.

  3. Add in the biscoff cookie butter, eggs, and vanilla bean paste (or vanilla extract), and mix well.

  4. Gradually add the all-purpose flour, cornstarch, baking powder, baking soda, and kosher salt. Mix until just combined. Be careful not to overmix.

  5. Fold in the chopped white chocolate and crumbled biscoff cookies.

  6. Scoop the cookie dough onto a parchment-lined cookie sheet.

  7. Bake in a preheated oven at 350 degrees Fahrenheit for about 9 minutes or until the edges start to brown.

  8. Allow the cookies to rest on the cookie sheet for 5 minutes before transferring them to a cooling rack to cool completely.
