My family absolutely adores strawberries, and pairing them with pancakes creates a delightful breakfast that everyone looks forward to. The sweet and tangy syrup complements the fluffy texture of the pancakes perfectly, making this dish a standout at our breakfast table. Whether we’re celebrating a special occasion or just enjoying a regular Saturday, these strawberry pancakes always bring smiles and satisfaction to our home.


Strawberry Pancakes with Strawberry Syrup


Ingredients


For the Strawberry Syrup:

  • 2 cups halved strawberries (stems removed; frozen can also be used)

  • ½ cup granulated sugar

  • 2 tsp lemon juice

For the Pancakes:

  • 2 cups all-purpose flour

  • ⅓ cup granulated sugar

  • 1 tbsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 large eggs

  • 1 tbsp vanilla extract

  • 2½ cups buttermilk

  • 4 tbsp melted unsalted butter

  • 1 cup fresh finely diced strawberries



Directions


Make the Strawberry Syrup:

  1. In a saucepan, combine the halved strawberries, sugar, and lemon juice.

  2. Bring the mixture to a boil over medium heat, stirring frequently.

  3. Once boiling, remove from heat and let it cool for a few minutes.

  4. Using an immersion blender, puree any remaining strawberry pieces until smooth.


    Prepare the Pancake Batter:

  5. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

  6. In a separate small bowl, whisk the eggs, vanilla, buttermilk, and melted butter until fully incorporated.

  7. Pour the wet ingredients into the dry ingredients and gently fold in the finely diced strawberries.


    Cook the Pancakes:

  8. Preheat a skillet or griddle over medium heat and lightly grease it.

  9. Pour ¼ cup of the pancake batter onto the skillet for each pancake.

  10. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side (about 2-3 minutes per side).


    Serve and Enjoy:

  11. Serve the pancakes warm, drizzled with the strawberry syrup. Add extra strawberries on top if desired!
