Sizzling Chicken and Cheese Skillet: The Perfect Valentine’s Day Meal!

If there’s one dish that brings a smile to my husband's face, it’s the Sizzling Chicken and Cheese Skillet inspired by our fond memories at TGI Fridays. This delightful recipe combines tender chicken with colorful bell peppers, creamy melted cheese, and fluffy mashed potatoes, making it a decadent meal that’s perfect for celebrating love this Valentine’s Day. Share a cozy night at home or impress your loved one with this easy-to-make dish that packs a flavorful punch. Sizzling Chicken & Cheese Skillet


Ingredients


  • 1 large chicken breast, thinly sliced into smaller pieces

  • 1 green bell pepper, thinly sliced

  • 1 red bell pepper, thinly sliced

  • ½ sweet onion, thinly sliced

  • Grapeseed oil or neutral oil

  • Sazon seasoning

  • Garlic powder

  • Onion powder

  • Smoked paprika

  • Garlic and herb seasoning

  • 1.5 lb mini gold potatoes

  • Roasted garlic paste

  • Ranch seasoning

  • Black pepper

  • 3 tbsp melted butter

  • 8 oz cheddar cheese

  • 4 oz mozzarella cheese


Directions


  1. Prepare the Vegetables: Thinly slice the green and red bell peppers, as well as the sweet onion. Heat a few tablespoons of grapeseed or neutral oil in a skillet over medium heat, and sauté the vegetables until they are tender. Remove from the skillet and set aside.

  2. Cook the Chicken: Take the thinly sliced chicken breast and season it generously with sazon, onion powder, garlic powder, smoked paprika, and garlic and herb seasoning. In the same skillet, add a little more oil if necessary, and sear the seasoned chicken pieces on both sides until fully cooked. Remove the chicken from the skillet and set aside.

  3. Prepare the Mashed Potatoes: While the chicken is cooking, boil the mini gold potatoes in a pot of salted water until fork-tender. Drain the potatoes and mash them. Mix in garlic powder, black pepper, ranch seasoning, garlic and herb seasoning, and the melted butter until creamy and well-combined.

  4. Assemble in a Cast Iron Skillet: Preheat your oven’s broiler. In a cast iron frying pan, layer a generous amount of cheddar and mozzarella cheeses on the bottom. Place the skillet in the oven under the broiler just long enough for the cheese to melt.

  5. Combine Everything: Once the cheese is melted, remove the skillet from the oven. Add the sautéed vegetables, cooked chicken, and creamy mashed potatoes on top of the melted cheese. Finish by topping everything with more cheese.

  6. Final Broil: Return the skillet to the oven and broil until the top is bubbly and golden brown.
