Peach Cobbler French Toast


Ingredients:

Peach Topping:

  • 29 oz can of peaches in syrup

  • ⅓ cup brown sugar

  • 1 tsp cinnamon

  • 1 tbsp vanilla extract or bean paste

  • 2 tbsp corn starch

  • 4 tbsp water French Toast:

  • 4 large eggs

  • 1 cup milk

  • 1 tbsp cinnamon

  • 1 tbsp vanilla extract or bean paste

  • 1 loaf brioche bread or bread of your choice


Directions


  1. In a saucepan, combine the entire can of peaches with syrup (do not drain), brown sugar, cinnamon, and vanilla extract. Cook over medium heat.

  2. In a small bowl, mix the corn starch with water until smooth and add it to the peach mixture. Stir continuously until the mixture thickens. Set aside.

  3. In a mixing bowl, whisk together the eggs, milk, cinnamon, and vanilla extract.

  4. Heat a non-stick skillet or griddle over medium heat.

  5. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.

  6. Place the soaked bread onto the hot skillet and cook until golden brown on both sides.
