This one-pan chicken and rice recipe is one of my favorite easy weekday meals for several compelling reasons. Not only is it incredibly simple to make, but it also requires minimal cleanup, which is a huge bonus for those hectic nights when time is of the essence. The beauty of this dish lies in its harmonious blend of tender chicken, aromatic spices, and perfectly cooked rice, which come together to create a satisfying meal that the whole family will love. As the chicken simmers in the pan, it absorbs the rich flavors of garlic, onion, and a medley of spices, while the rice soaks up the savory broth, resulting in a dish that's bursting with flavor. One-pan Chicken & Rice


Ingredients


You'll need

  • 1 lb chicken tenderloins or chicken thighs

  • 1 tsp smoked paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp Sazon Complete

  • 1 tsp Sazon seasoning

  • 1 tsp buttery garlic herb seasoning

  • 1 carton (4 cups) chicken broth

  • 2 cups water

  • 3 cloves minced garlic

  • 1 cup diced peppers (bell peppers, any color)

  • 1 cup diced onions

  • 2 cups rice of your choice

  • 2 tbsp olive oil

  • 1 tbsp butter


Directions


  1. Season the Chicken: In a mixing bowl, combine the smoked paprika, onion powder, garlic powder, Sazon Complete, Sazon seasoning, and buttery garlic herb seasoning. Coat the chicken tenderloins evenly with the seasoning mixture.

  2. Heat the Pan: In a large skillet or pan, heat the olive oil over medium-high heat.

  3. Cook the Chicken: Add the seasoned chicken tenderloins to the pan and cook for about 4-5 minutes on each side, or until browned. Remove the chicken from the pan and set aside.

  4. Sauté Vegetables: In the same pan, add the butter. Once melted, add the minced garlic, diced peppers, and onions. Sauté until the vegetables are softened, about 3-4 minutes.

  5. Add Rice and Broth: Stir in the washed rice, then add the chicken broth and water. Bring the mixture to a simmer.

  6. Return the Chicken: Place the browned chicken back into the pan on top of the rice mixture. Cover the pan with a lid and reduce the heat to low, letting it cook for about 20 minutes or until the rice is tender and the chicken is cooked through.

  7. Serve: Once done, fluff the rice with a fork, serve hot, and enjoy this flavorful one-pan meal!
