Ingredients:


1 cup unsalted butter, softened

  • 2 tablespoons lemon juice

  • 1 teaspoon vanilla extract

  • 3 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt


Directions:


Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with parchment paper or silicone baking mat.

  1. In a large mixing bowl, combine softened unsalted butter and granulated sugar. Use an electric mixer or a wooden spoon to cream them together until light and fluffy.

  2. Add the eggs, one at a time, to the butter mixture. Beat well after each addition, ensuring they are fully incorporated.

  3. Mix in the lemon juice, lemon zest, and vanilla extract. A citric burst of flavor is what we're aiming for in these cookies!
