No-Bake Lemon Cream Pie
Ingredients
You'll need;
(2) 9-inch shortbread or graham cracker pie shells
8 oz softened room temperature cream cheese
(2) 14 oz cans sweetened condensed milk
½ cup fresh squeezed lemon juice
1 cup heavy cream
2 tbsp lemon zest
8 oz Cool Whip
Directions
In a large bowl, add the softened cream cheese. Using a whisk or hand mixer, cream until smooth.
Incorporate the sweetened condensed milk into the cream cheese mixture and mix well.
Zest one lemon and set the zest aside.
Squeeze the juice from 3-4 lemons until you have ½ cup of fresh lemon juice.
Alternate adding the heavy cream and lemon juice and then the zest to the mixture, mixing until combined for an additional 2 minutes.
Pour the filling evenly into the two pie shells.
Cover and refrigerate for at least 8 hours or freeze for about 4 hours until set.
Once the pie has set, top with Cool Whip or whipped cream before serving.
