Heartwarming Lasagna Soup: A Family Favorite!
As the weather turns cooler, there’s nothing quite like a warm, hearty bowl of soup to bring the family together. One of my daughter’s absolute favorites is Lasagna Soup, a dish she often requests weekly! This delightful recipe captures all the comforting flavors of traditional lasagna but in a cozy, slurp-able form. It’s easy to make, packed with savory ingredients, and always leaves her asking for more. Let’s dive into how to create this delicious dish!
Lasagna Soup
Ingredients
1 box of Lasagna pasta (not oven ready)
1 sweet onion, diced roughly
2 tbsp minced garlic
Olive oil (for cooking down veggies)
1 lb Italian turkey sausage
1 lb ground turkey
2 tbsp tomato paste
1 (24 oz) jar of marinara sauce
6 cups water
½ cup heavy cream
Seasonings to taste for meat and later added to soup:
Garlic powder
Italian seasoning
Onion powder
Oregano
Parsley
Crushed red pepper
All-purpose seasoning
½ cup grated parmesan cheese
Ricotta Topping
16 oz ricotta cheese
Italian seasoning
Garlic powder
4 oz parmesan cheese
4 oz mozzarella cheese
Directions
In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onions and minced garlic, cooking until softened, about 3-4 minutes.
Add the Italian turkey sausage and ground turkey to the pot with the sautéed onions and garlic. Season with garlic powder, Italian seasoning, onion powder, oregano, crushed red pepper, and all-purpose seasoning. Cook until the meat is browned and cooked through.
Stir in the tomato paste and marinara sauce. Once combined, refill the empty jar with water twice and pour it into the pot. Add the ½ cup of heavy cream, mixing well.
Break the lasagna pasta into smaller pieces and stir them into the soup. Allow it to cook until the pasta is tender, usually around 10-12 minutes.
While the soup is cooking, prepare the ricotta mixture. In a separate bowl, combine the ricotta cheese, Italian seasoning, garlic powder, Parmesan cheese, and Mozzarella cheese. Mix well and set aside.
Once the pasta is cooked and soft, stir in the fresh parsley and parmesan cheese for added flavor.
Serve the soup hot, garnished with a generous dollop of the ricotta mixture on top and an extra sprinkle of parsley for a fresh finish.
