Grandma Josephine's' Signature Peach Cobbler: A Timeless Family Favorite
My grandmother's peach cobbler has always held a special place in my heart. As a child, I have fond memories of watching her expertly create this delightful dessert. The aroma of cinnamon and baking peaches filled the air, and I knew that something delicious was about to emerge from the oven. To this day, it remains my absolute favorite dessert, and I'm excited to share her recipe with you.
Grandmas Peach Cobbler
Ingredients
Two 29 oz cans of peaches in light or heavy syrup
1/4 cup sugar
1/2 cup brown sugar
2 tsp cinnamon
Pinch of nutmeg
Corn starch slurry for thickening
Dumplings and Crust:
2 2/3 cup all-purpose flour
1 cup cold unsalted butter
1 tsp salt
1 1/3 cup sugar
Ice cold water to form dough
Directions:
Start by preparing the pie crust and dumpling dough. Combine the dry ingredients and cut in the cold butter. Then, add ice-cold water gradually by the tbsp until the dough forms. Divide the dough in half, refrigerating one portion and using the other to form dumplings.
In a saucepan, mix the peaches, sugars, and cinnamon, then bring the mixture to a simmer. Once it begins to simmer, add in the dumplings and cook until done. Thicken the mixture by adding the corn starch slurry.
Next, transfer the peach and dumpling mixture into a 9x13 baking dish. Use the remaining pie crust to create strips, making a lattice crust to cover the dish. Finish by brushing the top with an egg wash.
Bake the cobbler in a preheated 350-degree oven until the crust turns a lovely golden brown.
