Spicy and Savory Chipotle Chicken Tacos

There's something magical about taco night in our house, and these Chipotle Chicken Tacos are always a hit! The tender, marinated chicken thighs infused with smoky chipotle flavor make for a delicious filling, and my family loves customizing their tacos with melty cheese, fresh cilantro, and their favorite toppings. Chipotle Chicken Tacos
Ingredients
6-8 boneless skinless chicken thighs
13 oz can of Chipotle sauce (or puree a can of chipotle peppers)
1 tsp garlic powder
1 tsp onion powder
1 tsp adobo seasoning
1 tsp smoked paprika
1 tsp sazon seasoning
8 oz whole milk mozzarella cheese, shredded
8 oz Monterey Jack cheese, shredded
Chopped cilantro, to taste
Taco-sized flour or corn tortillas
Avocado oil, for cooking
½ cup water
Directions
In a large bowl, combine the chicken thighs with garlic powder, onion powder, adobo, smoked paprika, sazon, and ½ can of chipotle sauce. Ensure the chicken is fully coated. Cover and marinate for at least 30 minutes.
Heat a medium-high temperature pan and add the marinated chicken thighs. Sear the chicken evenly on both sides until browned. Remove from the pan and let it rest for a few minutes.
Dice the seared chicken into bite-sized pieces and return it to the pan. Pour in the remaining chipotle sauce and ½ cup of water. Allow to simmer until the chicken is tender and the sauce has thickened, stirring occasionally.
On a hot pan or griddle, add a small amount of avocado oil. Once heated, add the tortillas and flip them over.
On one half of each tortilla, sprinkle shredded mozzarella and Monterey Jack cheese, followed by a generous serving of the chicken mixture. Top with chopped cilantro.
Fold the tortillas over and cook until the cheese has melted and the tortillas are lightly toasted. Remove from the griddle.
Serve your delicious tacos with sour cream and salsa on the side for an extra kick!
