Cajun Chicken Pasta


Ingredients



  • 4 boneless skinless chicken thighs

  • Onion powder

  • Garlic powder

  • Smoked paprika

  • Sazon seasoning

  • Cajun seasoning

  • Cayenne pepper

  • Neutral oil for cooking

  • 3 tbsp butter

  • 2 cups chopped spinach

  • 2 tbsp tomato paste

  • 1 tbsp garlic paste

  • 2 cups chicken broth

  • 1 cup heavy cream

  • Italian seasoning

  • 8 oz Parmesan cheese

  • 4 oz Mozzarella cheese

  • Fettuccine pasta

  • Crushed red pepper (to taste)


Directions


  1. Prepare the Chicken: Season the chicken thighs liberally with onion powder, garlic powder, sazon, smoked paprika, cayenne pepper, and Cajun seasoning.

  2. Sear the Chicken: Heat a neutral oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken thighs and sear them until cooked through and golden brown on both sides. Remove the chicken from the pan and set aside.

  3. Sauté the Vegetables: In the same skillet, reduce the heat and add the butter. Once melted, add the chopped spinach, tomato paste, and garlic paste. Stir until the spinach is wilted and well combined.

  4. Create the Sauce: Pour in the chicken broth and heavy cream. Add the Italian seasoning and additional Cajun seasoning to taste. Bring this mixture to a simmer.

  5. Add the Cheeses: Once simmering, stir in the Parmesan cheese until melted and smooth. Add the Mozzarella cheese, stirring until well incorporated.

  6. Combine with Pasta: Cook the fettuccine according to package instructions. Drain the pasta, then toss it in the creamy sauce until well coated.

  7. Serve: Slice the seared chicken and place it on top of the pasta. Finish with a sprinkle of crushed red pepper for an extra kick, if desired.
