Brown Sugar Pound Cake
Ingredients:
Cake:
1 1/2 cups of room temperature unsalted butter
1 cup of white sugar
2 cups of brown sugar
5 room temperature eggs
1 tablespoon of vanilla bean paste
1 cup of whole milk
3 cups of all-purpose flour
1/2 teaspoon of baking powder
Icing:
1/2 cup of unsalted butter
1 cup of brown sugar
1/2 cup of evaporated milk
2 cups of powdered sugar
1 teaspoon of vanilla
Directions:
Preheat your oven to 350°F (175°C) and grease and flour a 10-inch Bundt cake pan.
In a large mixing bowl, cream together the room temperature unsalted butter, white sugar, and brown sugar until light and fluffy.
Add the room temperature eggs, one at a time, beating well after each addition. Stir in the vanilla bean paste.
In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add the flour mixture to the butter mixture, alternating with the whole milk. Begin and end with the flour mixture, mixing until just combined. Be careful not to overmix.
Pour the batter into the prepared Bundt cake pan, spreading it evenly. Tap the pan gently on the counter to remove any air bubbles.
Bake for approximately 60-70 minutes, or until a toothpick inserted into the center comes out clean. The top of the cake should be golden brown.
While the cake is baking, prepare the icing. In a small saucepan, melt the unsalted butter over medium heat. Stir in the brown sugar and evaporated milk, and cook until the mixture comes to a boil. Remove from heat and let it cool slightly.
In a mixing bowl, combine the powdered sugar and vanilla. Gradually add the cooled brown sugar mixture to the powdered sugar mixture, stirring until smooth.
Once the cake has cooled for 10 minutes, invert it onto a wire rack to cool completely.
Drizzle the prepared icing over the cooled cake, allowing it to drip down the sides. You can garnish the cake with additional brown sugar or a dusting of powdered sugar, if desired.
Slice and serve the delicious brown sugar pound cake, and enjoy!
Note: This recipe yields a rich and moist cake, perfect for indulging.
