Blueberry muffins have always held a special place in my heart - they're my absolute favorite muffin! The burst of juicy blueberries in a moist, fluffy batter never fails to bring a smile to my face.
Blueberry Bliss: Irresistible Blueberry Muffins Recipe
Ingredients:
1 ½ cup all-purpose flour
¼ cup white sugar
½ cup brown sugar
2 tsp baking powder
½ tsp salt
⅓ cup vegetable oil
1 large egg
Milk (enough to reach the 1-cup line in a liquid measuring cup)
1 tsp vanilla extract
1 cup fresh blueberries Crumb topping
⅓ cup flour
⅓ cup brown sugar
¼ cup cold cubed butter
2 tsp cinnamon
few blueberries
Directions:
Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners or grease them.
In a mixing bowl, combine the flour, white sugar, brown sugar, baking powder, and salt. Mix well.
In a separate bowl or liquid measuring cup, whisk together the vegetable oil, egg, milk, and vanilla extract.
Pour the liquid mixture into the dry mixture and gently stir until just combined. Be careful not to overmix.
Gently fold in the fresh blueberries into the batter.
Spoon the batter into the muffin cups, filling each one about two-thirds full.
In a bowl, combine the flour, brown sugar, and cinnamon for the crumb topping.
Add the cold, cubed butter to the mixture.
Using a pastry cutter or fork, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
Sprinkle the crumb topping evenly over the muffin batter in the muffin cups before baking.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
