Blueberry Crumble Shortbread Bars
Ingredients
Shortbread:
1 cup (2 sticks) unsalted cold butter
2 cups all-purpose flour
½ cup sugar
¼ tsp salt
Blueberry Filling:
1½ cups blueberries
½ cup sugar
Juice of 1 lemon
1 tsp vanilla extract
Directions
Cube the cold butter and place it in a food processor. Add sugar, flour, and salt, and process until the dough starts to form.
In a saucepan, combine 1 cup of the blueberries (reserving ½ cup for later), ½ cup sugar, and lemon juice. Stir until it reaches a boil, then add in the vanilla extract.
Using an immersion blender, puree the blueberry mixture until smooth. Fold in the reserved ½ cup of blueberries and set the filling aside.
Line an 8x8 inch baking pan with parchment paper. Add half of the shortbread mixture and press it down flat to form the base.
Pour the blueberry filling over the shortbread base, spreading it evenly.
