Biscoff Three-Layer Cake Recipe


Ingredients:

For the Cake:

  • 1 box Yellow cake mix

  • 3.4 oz white chocolate or vanilla instant pudding mix

  • 1/2 cup melted unsalted butter

  • 1 & 1/3 cups milk

  • 4 eggs

  • 1 tbsp cookie butter emulsion

  • 1 tbsp vanilla extract or paste

  • 1/4 cup melted Biscoff butter


Frosting:

  • 2 cups unsalted butter, room temperature

  • 1/2 cup Biscoff cookie butter

  • 1 tbsp vanilla extract

  • 3 tbsp heavy cream

  • 32 oz or 2 lb bag of powdered sugar


For Garnish:

  • 1 pack of Biscoff cookies

  • 1/3 cup melted Biscoff butter



Directions


  1. Preheat your oven to the temperature specified on the cake mix box. Prepare three round cake pans by greasing and flouring them.

  2. In a mixing bowl, combine the yellow cake mix, white chocolate or vanilla instant pudding mix, melted unsalted butter, milk, eggs (one at a time), cookie butter emulsion, vanilla extract, and melted Biscoff butter. Mix until well combined and smooth.

  3. Divide the cake batter equally among the three prepared cake pans. Bake according to the package instructions or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely.

  4. To make the frosting, beat the room temperature unsalted butter until smooth, white and creamy. Add the Biscoff cookie butter, vanilla extract, and heavy cream. Gradually add the powdered sugar, mixing until smooth and fluffy.

  5. Place one cake layer on a serving plate and spread a generous amount of frosting on top. Repeat this process with the remaining cake layers, stacking them on top of each other. (Optional: Add cookie butter between the layers also)

  6. Use the remaining frosting to frost the sides and top of the cake. Smooth out the frosting with a spatula for a clean finish.

  7. Chill the cake in the refrigerator to let the frosting set.

  8. Before serving, garnish the cake with Biscoff cookies and drizzle melted Biscoff butter over the top.
